ERNESTOuchimuraThis week’s Hollywood Bowl calendar concludes with Reggae Night XIII, and like reggae itself, featured chef Ernesto Uchimura is the product of diverse cultural influences. As a kid, both Argentine and Japanese cuisines were served in his home, but Uchimura was always fascinated by iconic American comfort foods like fried chicken and burgers, both of which he has nearly perfected at Plan Check Kitchen + Bar. Here he introduces some quick-and-simple recipes ideal for enjoying with music under the stars.

PIMENTO CHEESE

Serves 2

INGREDIENTS

  • 3 ounces small diced roasted green poblano chile
  • 8 ounces cream cheese
  • 1 ounce shredded sharp Cheddar cheese
  • 2 teaspoons finely shredded Parmesan
  • 1/4 teaspoon Worcestershire sauce
  • 1/4 teaspoon yellow mustard, such as French’s
  • 1/2 teaspoon smoked salt
  • 1/4 teaspoon cayenne pepper
  • 1/2 bunch of thinly sliced scallions (green ends only)
  • 2 green olives, finely diced

PROCEDURE

  1. Blend poblano chile, cream cheese, Cheddar, Parmesan, Worcestershire, yellow mustard, smoked salt, and cayenne pepper in a food processor.
  2. Finish by stirring in by hand the scallions and olives.
  3. Adjust seasoning and spiciness to desired consistency.
  4. Serve with shaved aged ham like a country ham and choice of crackers or chips.

 

 


KIMCHI KALE “CAESAR” SALAD WITH CHICKEN

Serves 2

INGREDIENTS

  • 1 head romaine lettuce, cleaned
  • 3 handfuls baby kale (the equivalent to the amount of romaine)
  • 1 tablespoon grated Parmesan
  • 1/2 cup croutons
  • 10 ounces of grilled chicken, shredded
  • 1 pint any pre-made Caesar dressing
  • 1 cup kimchi

PROCEDURE

  1. In a food processor purée kimchi and Caesar dressing until smooth. Store and chill.
  2. Toss romaine and kale with just enough dressing to coat the lettuce.
  3. Garnish with parmesan cheese, croutons and chicken.

 

 


COLD BREWED COFFEE PARFAIT

Serves 2

INGREDIENTS

  • 8 ounces vanilla pudding
  • 4 ounces cold brewed coffee
  • 2 ounces honey
  • 4 crushed espresso biscotti (almond or chocolate biscotti also work)

PROCEDURE

  1. Mix cold brewed coffee with honey.
  2. In a 16-ounce cup, layer the ingredients. Start with pudding, then coffee, pudding, and then biscotti till the cup is full.
  3. Serve right away.

Russian Greats with Yuja Wang

In an evening of firsts, the astonishingly talented Yuja Wang plays the first piano concertos of both Shostakovich and Prokofiev for the first time in a single evening. Esa-Pekka Salonen takes the theme further with the first symphonies of both composers.
